Dear Readers:

If you count calories, or tear your hair out over making pie crust, then this is a recipe for you - Crustless Apple Pie.  The hardest part of this recipe is peeling the apples.   Of course, anything with apples, plus a hot cup of tea or coffee on a cold winter's night, makes everything look better.

RECIPE FOR THE WEEK - WEST AFRICAN YAM AND GOUNDNUT STEW

Dear Readers:

I hope you all had a wonderful holiday.  This week is a recipe for those of you who are vegan and for those who need to be gluten free.  There is a lot of flavor in this stew and even if you are a 'meat and potatoes' type of eater, you will enjoy this stew - West African Yam and Goundnut Stew.  I serve it with quiona, which in itself only take about 15 minutes to prepare.

RECIPE FOR THE WEEK - (EGG) CUP CUSTARD

Dear Readers:

Continuing my Traditional Foods for the holidays, I am republishing a recipe that I did about two years ago.  I have, however, made some changes to make a richer version of Cup Custard.  Mixtures of milk and eggs thickened by heat have long been part of European cuisine. Custards baked in pastry were very popular in the Middle Ages, and are the origin of the English word 'custard'.

This will be my last recipe post for 2012.  Next week being Christmas, I plan to enjoy being with my family.  I wish all of you a Merry Christmas and a Happy New Year.  My next recipe posting will be January 3, 2013.

Recipe for the Week - Spiced Peanut Bars

Hope everyone has had a great week.  We in Tennessee are finally getting much needed rain.  Between the 100 degree temperatures and no rain, I thought I had moved back to Alabama. This week we are making Spiced Peanut Bars.  I think many years ago they misnamed the recipe, because I would have called it Spiced Peanut Butter Bars.  Great treat to have on hand for the kids or the grandkids.  Source of protein without a lot of sugar.
