Confessions of a Food Allergic Person

Dear Readers:

A little more than a week ago, I learned that I had several food allergies.  Many of these were a #1 on a scale of 1 to 4, which meant I could have them on occasion.  There were fruits, vegetables, and surprisingly even though there was a reaction to wheat, oats, and rice, I did not have any reaction to gluten - go figure!  

Among the fruits were apples, bananas, cranberries (you've got to be kidding, cranberries!), and pineapple.  I have learned that in many cases if you eat these cooked, which kills the protein in them that I am really allergic to, there should not be problem.  

However, the strongest reaction with all the pretty little red lines and marks was to buckwheat.  At first I thought, 'I don't eat buckwheat'...and then the light bulb went on...'you have buckwheat pillows on your bed'.  That certainly explained why I would wake up in the morning and felt like an elephant had slept on my chest - cough, congestion, and wheezing, all of which would go away as the day progressed.  I kept thinking I has some upper respiratory issue that I couldn't get rid of even after a round of antibiotics.  Needless to say, the pillows left the bed, left the bedroom, and left the house!  It was amazing how much better I felt the next morning. 

Now I was on the hunt to find those products that didn't have wheat and oats, of which there are many.  But, guess what, a large percentage of those products have BUCKWHEAT as a substitute!  Next plan...I have decided that since my reaction to wheat if very low, I will on occasion have a thin slice bread to make a sandwich, and I seem to doing okay with that plan. 

Next culprit on the list, at number 3, is garlic, but that is a tale for later in the week.
